2 ears of corn
1 Tbsp butter
1+ cups water
1/6 tsp sugar
1/6 tsp salt
1/6 tsp pepper
Husk and wash corn. Using a sharp knife cut off the top of the kernels on bottom half of the corn. Turn and finish other half. Use a spoon to scrape the cob and remove remaining corn bits.
Melt butter in a skillet and add corn and remaining ingredients. Boil 5 minutes stirring constantly. Reduce heat, cover, and simmer 20 minutes, stirring occasionally.
The consistency should be like creamed corn. But I like to leave the cover off so the liquid boils off too. Makes about 3 servings.
