This is a tasty sweet bread recipe much like zucchini bread. I originally saw it in the Backwoods Home newsletter. I just needed to add a bit of water to mine to get the right consistency.

Green Tomato Bread

2 large eggs, lightly beaten
1 cup vegetable oil
1 teaspoon vanilla extract

3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups granulated sugar
1 tablespoon cinnamon

2 cups finely chopped or ground green tomatoes – about 2 medium
1 1/2 cups chopped pecans

Combine wet ingredients. Stir together dry ingredients and add to wet. Mix just until moistened. Fold in tomatoes and optional pecans and pour into 2 greased bread pans.  Bake at 350 for one hour, or until knife comes out clean.
