Rumpledethumps

This is a brand new recipe I found that used some of my end of the season veggies. It’s a slight modification of a Moosewood recipe that is WONDERFUL and quite frugal…especially if you are using homegrown ingredients.

my about-to-be dinner

1 cup cabbage, chopped
1 cup broccoli, coarsely chopped
1/4 onion or handful of green onions.
2 large potatoes
2 tablespoons butter
1/8 teaspoon oregano
salt and pepper, to taste
1/8 cup milk
1/4 cup cheddar cheese, grated

Steam cabbage, broccoli and onions for about 12 minutes or until tender. Meanwhile, coarsely chop and boil potatoes until tender. Drain and mash potatoes with butter, oregano, salt, pepper, and milk. Mix potatoes with veggies and place in greased casserole dish. Top with cheddar and put under broiler until cheese is melted and slightly browned.

Makes about 2 main dish servings or 4 side dish servings.

    What a fun name, rumpledethumps. It always helps to have a good name for something, so when people ask “What’s this?” you don’t have to say “baked mashed potatoes with cabbage & broccoli”.
