Soba Noodles with Eggs

I discovered a new Asian grocery today, so this is what I whipped up with my findings 🙂 It’s based vaguely on a Korean comfort food bibimbap, using ingredients I had on hand. Serving an egg on noodles caught my eye as being unusual, but think fried rice! Having the egg also lets you add pretty much any ingredient you’d either add to a stif fry or an omlette. This will be a fun one to experiment with different variations of.

Soba Noodles with Eggs

1 bunch soba / buckwheat noodles (or 2 servings of whatever you gots)
2 eggs
1 Tbsp soy sauce
1/2 tsp wakame (or bunch of whatever sauteable green you want to use)
1 Tbsp scallions
1/2 garlic clove

Soak wakame. Cook noodles per directions and drain. Saute wakame and scallions in oil until tender. Remove from heat and add soy sauce. Toss with noodles. Fry egg and serve over noodles. I topped with a little furikake for perty.

Serves 2.
