This is a simple little recipe I came across when looking for new ideas for my home canned beans. It turned out really great and it’s definitely going on the dinner rotation.
1/2 cup dry rice
1 pint (2 cups) canned pinto beans with liquid
1/4 cup picante sauce (or salsa)
1/4 teaspoon each pepper, cumin, oregano
1/2 teaspoon garlic powder
1 teaspoons each salt, chili powder
1/2 tablespoon fresh minced garlic
Cook rice. Simmer remaining ingredients until thickened. Add rice and warm through.
