Cauliflower Grautin

At the advice of a friend, I picked up Jessica Seinfeld’s books from the library to try some “hidden veggie” recipes. I like that they are comfort foods I have occasionally anyway that have extra vegetables in them.

Cauliflower Grautin from "Double Delicious"

1 head cauliflower
1 tablespoon butter
2 teaspoons flour
1 cup milk
1/2 cup shredded cheddar
3/4 cup carrots
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons parmesan

Cook and mash carrots, set aside. Chop cauliflower into bite sized florets and boil 3 minutes, drain and set aside. In large sauce pan, melt butter. Whisk in flour and cook 1 minute. Whisk in milk and bring to boil. Cook 2-3 minutes more once it begins to thicken.

Reduce heat to low and add cheese, carrots, salt, and pepper. Once combined fold in cauliflower and transfer to greased 9 inch baking dish. Top with parmesan and bake 15 minutes until bubbly and starting to brown.
