Veggie Spaghettios

Growing up I absolutely loved Spaghetti-Os, so there are fond memories attached to this homemade healthier version. The original author on Super Healthy Kids added extra carrot juice to sweeten hers up a bit. I agree a small amount of sweetness would make it better, but it was wonderful as is.

Veggie Spaghettios

4 carrots
1 stalk celery
1 1/2 cups diced tomatoes (with liquid)
salt to taste
1 1/2 cups O shaped noodles

Simmer first 4 ingredients in a small sauce pot until tender. I used a 1 1/2 quart pot and kept the liquid level just above the veggies. Blend in a steam safe blender (I used a Vitamix) or stick blender. Cook the dry noodles, combine with sauce, and heat through.
