To use, just drain, dice and fry. Mine is shown here served with eggs from a friends backyard flock and sprouted whole wheat toast with homemade cultured butter. When corned beef goes on sale for St. Patrick’s Day I plan to do another big batch! Next time I’ll use more potatoes to make it a bit more frugal too, as her recipe is a high percentage of expensive meat.
