This is a simple recipe my mother used to make and call teriyaki. I know it isn’t but I’ve acquired a taste for it and now it is my go to recipe for summer squash.
Slice your summer squash and cut your chicken into large dices. Make a marinade of one part coconut aminos (or soy sauce), one part ketchup, one part EVOO. Let marinade in fridge and then fry up in a skillet. Serve over rice.
