Pumpkin Chai Tea Latte Concentrate

4 cups water
1/3 cup sweetener of choice (I used rapadura)
3/4 cup pumpkin puree
2 cinnamon sticks
3 star anise pods
12 whole cloves
8 black peppercorns
1/8 tsp cardamom seeds (or 8 pods, crushed)
1/8 tsp ground ginger (or 1″ fresh ginger)
10 black tea bags (or 1/4 cup loose tea)
1 tsp vanilla extract

Dissolve sweetener in near boiling water. Whisk in pumpkin. Add spices and gently simmer for 20 minutes. Remove from heat and let tea steep for 10 minutes. Add vanilla and pour through a looser strainer that won’t clog up with the pumpkin puree. Should store in the fridge for 1 week. To use, heat equal parts concentrate and milk in a small sauce pan.
