Creamy Turkey and Wild Rice

1/2 cup wild rice
1 1/2 cups broth

1⁄2 medium onion, chopped
1 celery stalk, diced
2 carrots/parsnips, diced
1⁄4 cup butter
4 tsp arrowroot powder (or cornstarch)
2 cups broth
1 cup cream
1 cup cooked turkey, diced
1⁄2 tsp dried parsley
1⁄4 tsp salt
1⁄8 tsp pepper

Cook wild rice in broth. Meanwhile, saute onion, celery and carrots in butter until tender. Blend in arrowroot powder and cook until bubbly. Gradually add broth, stirring constantly and bring to boil. Add wild rice, cream, turkey, parsley, salt, and pepper. Reduce heat and simmer 20 minutes.
