Spanish Rice

2 TBSP EVOO
1/2 cup chopped onion
3 cloves garlic, minced
1 1/4 cups rice
3 cups water
1 cup tomato sauce
1/2 tsp sea salt

In a small saucepan, saute onion in oil until tender. Add garlic and rice and lightly toast. Add water, tomato sauce, and salt and mix well. Bring to boil then reduce heat and simmer 15 minutes until rice is tender and liquid absorbed.
