Bacon Wrapped Rainbow Trout

I love this because it’s so simple and so delicious. Literally just wrap some fish in bacon and bake it at 400 degrees for 20 minutes until bacon is crisp. I used Rainbow Trout since we have an awesome spring fed trout farm in the area (Rushing Waters Fisheries) and I had just gotten some fresh trout at the Milwaukee County Winter’s Farmer Market.
