Roasted Baby Beets and Sauteed Beet Greens

In spring, bunches of baby beets appear at the farmers market and CSA shares.  I’m working at a CSA on Saturday’s this season and got to harvest and wash these beauties for the members.

When I got my bunch home, I washed them again and cut off the tops.  The beets were sliced, tossed in EVOO and a bit of rosemary, and roasted at 375 for about 30 minutes.  When they were almost done, I cut up the tops and sauteed in EVOO with a splash of balsamic vinegar.  When wilted, salt and pepper and serve.
